Vietnamese Grilled Fish
In Vietnam, small fish are often tossed in flour and deep-fried, then a tangy sauce that is similar to the popular Fish Sauce Dip is poured over the top. This healthier alternative calls for grilled fish, but the delicious sweet, sour and slightly hot sauce remains the same.
3 tablespoons oil
1 tablespoon minced garlic
1 kg (2 lbs) whole snapper, bream or sea bass
Sprigs of coriander leaves, to garnish
Sauce
125 ml (½ cup) water
60 ml (¼ cup) fish sauce
3 tablespoons freshly squeezed lime or lemon juice
3 tablespoons rice vinegar
2 tablespoons caster sugar
2 teaspoons minced garlic
2 teaspoons minced red chili
1 tablespoon cornstarch, dissolved in 2 tablespoons water
